Lauki ki Sabzi

Simple yet satisfying; lauki ki sabzi is absolutely no fuss and needs very few spices. I admire it’s simplicity and appreciate it’s flavor, it’s benefits. Light on stomach, it is considered excellent for digestion especially in summers and people who are recovering from ailments. It is also ideal food eaten during fasting.

Preparation time: 20 minutes

Ingredients:
1 medium lauki peeled and cubed
2 green chilies chopped
2 medium tomatoes diced
1tsp ginger grated
1 tsp cumin
Salt to taste(rock salt)
¼ tsp black pepper powder
½ tsp turmeric
1 tsp garam masala
Oil/ghee
Coriander for garnish

Method:
In pressure cooker heat 1 tsp ghee, add cumin and let it splutter. Add green chilies, ginger and stir for few seconds. Add tomatoes and cook till soft. Add turmeric, salt, pepper, garam masalas and stir. Add lauki and ½ cup water and mix well. Put the lid on and cook up to 3 whistles on medium heat. Garnish with coriander and serve.
