Garlic mushrooms on toast
My daughter’s love for mushrooms inspired me to make this great tasting appetizer. This dish is so simple to prepare and looks great if you use a variety of mushrooms for shape and texture. Serve the mushrooms on a ciabatta or whole wheat toast, if you prefer.
Tip: Wipe the mushrooms with a wet paper towel than washing otherwise they absorb water and the dish loses its crispiness.

- 4 tbsp butter
- 2 garlic cloves
- 12 oz mixed mushrooms (open cap, white, shiitake) sliced
- 1 medium onion thinly sliced
- 8 slices French bread
- 1 tbsp chopped fresh parsley
- 1 tbsp grated parmesan cheese
- Salt and pepper
Method:
- Preheat the broiler to medium. Melt butter in a large, heavy skillet. Add garlic and cook stirring constantly, for 30 seconds.
- Add the onions and cook for 3-4 minutes till golden brown. Toss in the mushrooms and cook for 5 minutes, turning occasionally.
- Toast the French bread slices under the preheated broiler for 2-3 minutes, turning once. Transfer toasts to a large serving plate.
- Toss the parsley into the mushrooms, mixing well, and season to taste with salt and pepper.
- Spoon the onion mushroom mixture over the toasted bread slices, garnish with parmesan cheese and serve immediately.
