Aloo Sabudana Tiki
“Ek sabudana aur anek recipes”. My love affair with sabudana started with my navratri fasts this season. Sabudana kheer, khichidi and now tiki. Hopefully I will conjure another recipe using these pearls before my fasting ends.

- ½ cup sabudana, washed, drained and kept overnight
- 2 large potatoes, boiled, peeled and mashed
- 2 green chilies finely chopped
- 2 tsp ginger grated
- 2-3 leaves of mint finely chopped
- 1 tsp coriander powder
- Salt to taste
- Oil
- For the garnish: grated radish, chopped coriander, tomato and cucumber
Method:
- Wash sago thoroughly, drain the water completely and let it sit overnight. Next morning the sago should appear translucent and swollen up.
- In a bowl mix all the ingredients together. They should bind together like dough. Now with wet hands, make small balls and flatten them with the palm of your hand like a tiki.
- Heat some oil in a frying pan. Shallow fry the tiki till golden brown on both sides.
- Garnish with radish, cucumber, tomato and coriander.
- Serve hot with your favorite chutney or sauce.
