Tomato Pulao
Just adding tomatoes to a simple rice preparation would result in such a delicious change was my discovery when I made this dish for our lunch today. I wanted to keep it simple and just enjoy the rich tomato flavor in the rice! You might add onions, peas or any other vegetable of your liking.

Ingredients:
- 1 and 2/3 cups basmati rice, washed, soaked and drained
- 1 tsp jeera seeds
- 1 tsp black peppercorns
- 2-3 black cardamoms
- 10 curry leaves
- 1 medium tomato chopped
- 4 tsp tomato puree
- Salt
- 2 ½ cups hot water
- 4 tbsp oil
Method:
- Heat oil in a heavy pan and add jeera, black peppercorns and cardamom pods. Stir a few times add curry leaves and rice. Decrease the heat and stir fry until the rice grains turn shiny.
- Drop in tomatoes, puree and salt. Increase the heat, mix well and pour hot water. Give it a good stir, cover and cook over low heat until rice is fluffy and dry.
- Serve hot with curd or curry of your choice.
