Pasta penne in tomato sauce


This classic tomato sauce pasta gets prepared in minutes and can be enjoyed anytime. The sauce fills the tubes of pasta and gives the right flavor and amount with each bite. Eat with your favorite bread or salad or just like that!

Ingredients:
  • 2 cloves Garlic minced
  • 1 small Onion finely chopped
  • 1 tsp dried Italian herb mixture
  • 2 medium Tomatoes skinned and finely chopped
  • 1 cup marinara/pasta sauce (any kind you like)
  • 4 Sun dried Tomatoes in oil, chopped finely (optional)
  • 1tsp sugar
  • Olive oil
  • Salt
  • Freshly ground black pepper
  • 1 cup pasta (penne or any shape of your choice)
  • ½ cup grated Parmesan cheese plus some for garnishing

Method:
  • Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite (aldente), stirring occasionally, about 8 minutes. Drain and reserve 1 cup of the pasta water for later.
  • Meanwhile, heat 2 tsp oil a skillet. Add the garlic and stir for a minute don’t let it burn. Now add the onions and cook till light pink. Add tomatoes and cook till soft. Now add the marinara sauce, sun dried tomatoes, salt and pepper, to taste, sugar and the herb mixture. Cook for 3-4 minutes. Stir in the Parmesan cheese.
  • Add the pasta and toss to coat, adding enough reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper and sprinkle with parmesan before serving.
