Methi Puri

I am a total fan of methi and keep finding ways to incorporate it into my daily cooking. This Saturday on my family’s popular demand for puris, I thought what could be a better way to enjoy methi .The puris were so mouth watering that my almost 4yr old daughter had three of them and still wanted more. It can be prepared with fresh methi leaves but since it was on the spur of the moment, I substituted it with kasoori methi .I prepared extra ones and kept them in a hot tiffin box so as to enjoy them as a snack with our evening tea.

Ingredients:
  • 2 tbsp Kasoori methi /Fresh methi leaves(1/2 cup, washed and chopped)
  • 1 cup Whole wheat flour
  • ¼ cup Besan
  • ¼ cup All purpose flour/Maida
  • Salt 
  • 1 ½ tsp Red chili powder 
  • 1 tsp Ginger grated
  • ½ tsp Ajwain
  • Oil

Method:
  • Take wheat flour, maida, besan, ginger, salt, kasoori methi, ajwain, red chili in a bowl. Add two tablespoons of hot oil and mix. Add as little water as possible and knead it into a stiff dough. 
  • Heat sufficient oil in a kadai. Divide the dough into lemon sized portions and roll into balls. Roll them into thick puris and deep fry till golden and crisp. Serve hot.
