Eggless Date and Walnut Cake

An extremely easy cake with just 6 ingredients and believe me it is so delicious that it will go way sooner than it took to make it. I made it especially for my mother in law who is a strict vegetarian and she too loved it. Great with that extra cup of tea/coffee during our chilly winters!

Preparation and Baking time: 1 hr

Ingredients:
20 pitted dates (soak them in warm water for half an hour, drain and blend into paste, adding 1 tsp of water at a time)
¼ cup walnuts
1 ¼ cup all purpose flour (maida)
1 stick (½ cup/4oz) unsalted butter (soft at room temperature)
14 oz/ 1 can (approx. 2 cups) sweetened condensed milk
1 tsp baking powder
1 ½ tsp baking soda
Oil/butter for greasing cake pan

Method:
Preheat the oven at 350 degree Fahrenheit (180 degree Celsius). Grease a cake pan and keep aside.
Sift the flour, baking powder and baking soda together in a bowl. Mix together softened butter and date paste. Blend this with the flour mix, adding the sweetened condensed milk. Fold in the walnuts. Pour the mix into a greased cake pan.
Place the cake pan in the middle rack of the oven for 35-40 minutes. To test if the cake is done, insert a wooden toothpick/skewer into the cake and slide it out, if it comes clean the cake is ready.
Let it cool down for 15 minutes before taking it out of the pan. Cut into squares and serve.
