Crispy Arbi

This roasted golden brown, crispy arbi with lemon juice sprinkled on top will surely make your taste buds stand up and dance. Crispy on the outside and soft on the inside, eat it just like that or with roti or rice.
Preparation time: 20 minutes

  • 7-8 medium sized arbi, peeled and sliced thinly
  • 2 tbsp ginger-chili paste
  • 1 tsp cumin seeds
  • ¼ tsp turmeric powder 
  • Salt/rock salt to taste 
  • a pinch of mango powder/amchoor 
  • 1 tsp garam masala
  • Oil 
  • 1tsp Lemon juice

  • Heat up the oil and add the cumin seeds. Let them splutter. 
  • Mix in the ginger chilli paste and stir fry for a minute. 
  • Add turmeric powder, arbi and stir fry on medium heat. Simultaneously mix in salt, garam masala, mango powder and mix well.
  • Cook the cut arbi till slightly browned for about 10 -15 minutes. 
  • Sprinkle on lemon juice and serve immediately.
