Black-eyed pea salsa on papdi
This salsa is delightfully healthy and extremely simple using fresh tomatoes, raw green chilies, onions with tamarind and coriander-mint chutney. Combined with your imagination you can come up with many variations for this homemade salsa recipe. The crunchiness of papdi combined with the sweet and tangy flavors of this salsa will make your taste buds dance. It's colorful and most important, it's delicious!

Ingredients:
- ½ cup boiled black-eyed peas/ rongi/ lobia
- 3 tablespoons finely chopped onion
- 1 large ripe tomato, peeled and seeds removed, chopped
- 2 green chilis, finely chopped
- 2-3 tsp coriander –mint chutney
- 2-3 tsp of tamarind chutney
- 1 ½ - 2 tablespoons lime juice
- 8-10 papadis
- Chaat masala to sprinkle (optinal)
- Salt and pepper
Method:
- Combine black-eyed peas with onions, chopped tomatoes, green chilis, lime juice, salt, and pepper.
- Place a spoonful of this mixture on the papdi. Top it with coriander-mint and tamarind chutney. Sprinkle some chaat masala on top.
- Serve immediately and enjoy!
