Aloo tamatar ki Subzi

Preparation time: 20 minutes

  • 2 potatoes boiled, peeled and cubed
  • 1tsp ajwain
  • 2 green chilies finely chopped
  • 1tsp ginger chopped
  • ½ tsp turmeric
  • 1tsp salt
  • ½ tsp black pepper
  • ½ tsp garam masala
  • Oil
  • Coriander for garnish

  • In a pan heat some oil, add ajwain seeds and stir for few seconds, add green chilies, ginger and fry for a minute. 
  • Add tomatoes and cook until soft. 
  • Now add turmeric, salt, pepper, garam masala and stir for few seconds. 
  • Add potatoes with 2 cups of water. 
  • Cover and cook on medium heat for 10 minutes. 
  • Garnish with coriander and serve.
